I was bored today and decided to make cookies. I used a variation of the Vanilla Huel Chocolate Chip cookie recipe that I found on here. I modified it a fair bit mostly due to not having any chocolate chips on hand.
Ingredients:
2 cups vanilla Huel
1 scoop toasted marshmallow protein powder
1/2 teaspoon baking powder
1/4 cup turbinado sugar
2 large eggs
1/2 cup butter
1 tablespoon good baking cocoa
4 tablespoons PB2 powdered peanut butter
1 and 1/3 cups 2% milk
1 teaspoon vanilla
Bake in a pre-heated oven @ 350 for 15 minutes. Yields ~39 cookies.
Cookies turned out great and I ate 3 with a cup of tea. They are cake like and do have the characteristic Huel taste and are lightly sweet. When I make these again, I am going increase the amount of PB2 powdered peanut butter to 6 or 8 tablespoons and up the baking cocoa to 2 tablespoons. Probably have to increase the amount of milk to 1 and 1/2 cups as well. I could hardly taste the peanut butter or cocoa.
