I wanted to share my pancake recipe with everyone, especially for those that love Apple Butter. It’s pretty simple as I use a pre-made pancake mix where you just add water. These are, hands down the best pancakes I have ever made and possibly had, here’s what you need:
1 scoop of Huel, U/U
Apple Butter (Amount depends on how much you want to use)
1/4 cup of pancake mix (I use Birch Benders Keto Mix: https://bit.ly/38IcJQH)
1 teaspoon of Extra Virgin Olive Oil (optional)
Two heaping (can never have too much PB) tbsp’s of Natural Peanut Butter
In a bowl mix the Huel and pancake mix with water until thoroughly mixed.
Add in the Olive Oil if desired, I do for extra monounsaturated fats.
Mix in the PB, add more water to desired consistency.
I than add like 1 to 2 tbsp’s of the pancake batter on the skillet and than add 1 tbsp of Apple Butter on top of the batter, than cover it with more pancake batter and cook the pancakes as you normally would.
Should yield about 3 to 4 pancakes, depends on how much pancake mix and PB you add.
I eat these with no additional toppings on the pancakes, so no syrup etc. to keep sugar and calories down as much as possible, but obliviously, you do you and add what you want on top, but I have to say, nothing additional is needed with the Apple Butter filling, except maybe more Apple Butter on top, lol.
Take note that the Keto pancake mix I use make the pancakes more flaky than regular pancake mix, the Huel and PB help, but still just a heads up if you choose to use it over regular pancake mix.
